About the Course

Allergen awareness can help individuals to avoid everything from upset stomachs to anaphylactic shock. The new EU legislation on food information also came into effect in 2014 making allergen awareness training a priority in care homes. Though standard allergens may seem straightforward, this course will teach candidates how complicated identifying potentially harmful ingredients can be – E-numbers can, for example, contain allergens.
As with all of our care home training courses, certification is valid for three years after completion of the course.

The 14 major food allergens covered by EU legislation
Procedures for handling food
Kitchen systems, such as Hazard Analysis and Critical Control Point (HACCP)
Personal protective equipment
Cross contamination
Procedures for monitoring food preparation areas
Symptoms of allergic reactions, coeliac disease, and anaphylaxis
Auto adrenaline injectors, and how to deal with medical emergencies
Communication with residents pertaining to allergens
